For all my vegans & gluten-free viewers! I’m not a vegan or gluten-free but I absolutely loved these cookies and definitely recommend them to everyone! I typically don’t like coconut but I really enjoyed the slight taste in this recipe 🙂 The texture and taste is perfect, definitely my go-to recipe from now on. Substitute the chocolate chips for nuts and you’ve got yourself a healthy treat! Enjoy!

Makes 25 cookies, rolled using about 1- 1 1/2 tbsp per cookie
-1 cup coconut oil
-1 cup brown sugar
-1/4 cups almond milk (great substitute could be soy milk)
-1 tsp vanilla extract
-2 1/4 cups gluten-free flour
-1 tsp baking soda
-1 cup chocolate chips (also vegan)
