Hi guys! Welcome to the first video of my new series! I am going to start sharing with you single serving portioned desserts, every Sunday or so! I try and live a healthy life style, but I also have a HUGE sweet tooth, and so having a single cookie, or a single cinnamon roll, is a lot more practical for me than baking off an entire batch… because then I’d eat it alllll! I hope you guys enjoy this chewy, crispy, chocolate chip cookie!
ONE CHOCOLATE CHIP COOKIE RECIPE
-1 tsp flax meal (ground up flax seeds) + 2 tsp water
-2 tbsp vegan butter
-3 tbsp organic brown sugar
-1/4 tsp pure vanilla extract
-1/3 c all purpose flour
-1/8 tsp baking soda
-1/8 tsp sea salt, or kosher salt
-1/4 c vegan semi-sweet chocolate chips
-Preheat oven to 350 degrees fahrenheit.
-In a ramekin, combine the flax meal and water, stir, and let sit for 1 minute to “congeal” into a flax egg.
-In a small mixing bowl combine the butter, brown sugar, vanilla extract, and the flax egg. Mix with a fork until well combined.
-To that same mixing bowl add the flour, baking soda, and sea salt. Mix until well combined.
-Take half of the chocolate chips and mix into the dough.
-Form the dough into an inch thick disc. You can set the dough in the refrigerator for a few minutes before forming the cookie if it is too sticky for you to handle.
-Lay the cookie on a lightly sprayed sheet tray, or a parchment lined sheet tray, and gently press the other half of the chocolate chips on top.
-Bake for 12-14 minutes and then allow to cool for a few minutes to completely set. My cookie baked for 14 minutes, but everyone’s oven is slightly different.
