Vegan Christmas Cake Recipe
Hey Everybody! In this video we make my favourite, last minute Christmas cake. You know what? It’s also vegan!
My recipe has coffee, chocolate, cherries and all the usual Christmas Cake goodness AND it’s suitable for vegans, dairy free and the rest of us who just love good fruit cake.
I soak mine with my favourite, Bushmills whisky from Ireland. It’s not traditional but it is GOOD!

320g Plain Flour
20g Cocoa Powder
500g Mixed Dried Fruit and Peel
9 Gacier Cherries
250ml Oatly (Or your favourite milk replacement, almond milk would be amazing too)
70g Vegan Margarine (Sunflower margarine)
30ml Strong Coffee
1tsp Bicarbonate of Soda
2 Limes (For their zest
1/2 tsp Cinnamon
1/2 tsp Ginger
1/4 tsp Nutmeg
Pinch of salt
Shot of Whiskey (plus one for you, because, Christmas!)
