Vegan Pandan Sponge Cake
(makes two 8-inch rounds)

– 2 cups soy milk
– 2 tsp cider vinegar
– 2 1/2 cups flour
– 1/3 cup cornstarch
– 2 tsp baking powder
– 1 tsp baking soda
– pinch of salt
– 3/4 cup sugar or sugar substitute
– 2/3 cup oil
– 2 tablespoons pandan juice (puree 10 pandan leaves with 4 tablespoons water, strain out juice)
– 1 tablespoon pandan extract

  1. Another great video! This cake looks lovely, but I’ve never heard of pandan before (at first I thought it said panda, lol) and I don’t think that it’s available where I live. What does it taste like?
