I tried going low carb vegan for ONE WEEK and decided to film a What I Ate in a Week video. This is the second video to my low carb vegan video series. Here I’m showing you what I ate in the first 4 days of this low carb journey.

BROCCOLI CREAM SOUP RECIPE –

Ingredients:
170g broccoli
1/4 cup nutritional yeast
1/2 cup cashews (preferably soaked but not necessary)
1 cup coconut milk
1 cup water or more (I used 2 cups but thought it was too much)
1 tsp vegetable broth powder
1 tsp onion powder
1 tsp garlic powder

Instructions:
1. place all ingredients into a pot and mix well.
2. bring to a boil on high heat on the stove and turn it down to a simmer for about 20 minutes until broccoli and cashews have softened.
3. blend the soup with an immersion blender or place the contents into a high powder blender to blend into a creamy consistency.

  2. Aw well done, I need to try this . Year ago when I ate meat i lost ton of weight on a low carb diet but it was gross. now I am vegan this low carb looks alot more healthier and appetizing

    I miss lentils, and beans. I used to use them all of the time. But being low carb, they add too many carbs to my daily carb count. 🙁 I love that my pea protein is low carb, that helps a lot. I wish more vegetables were low carb. Great video! Thanks for some more options for low carb eating!! 💜
